How to prepare Tuna and Onion Sandwich
To prepare the tuna and onion sandwich, make sure you have purchased fresh, flash-frozen fish. Start with the mayonnaise. Pour the egg yolk into a bowl, along with the juice of half a lemon 1. Begin working with the electric beaters and gradually pour in the vegetable oil in a thin stream, without stopping the beaters. Continue working until the oil is finished and you have a firm consistency 3.
Add salt and pepper 4, mix with a spatula 5, and set aside in the refrigerator. Clean the onions and cut them into wedges 6.
In a saucepan, pour the oil and heat it. Add the onions 7, salt 8, and brown sugar 9.
Add the first portion of water 10. The amount of water will depend on the size of the saucepan; in any case, you can add more if needed. It will take a total of 10 minutes to stew the onions. Meanwhile, cut the previously flash-frozen tuna into cubes 11.
Season it with salt, oil, and the zest of a lemon 13. Mix well 14 and set aside in the refrigerator. After about 10 minutes of cooking, the onions will be soft and glossy 15. Turn off the heat and set them aside.
Transfer the two types of olives and the desalted capers to a cutting board 16, chop them with a knife until you obtain a tapenade 17. Now assemble the sandwiches. First, open the two rolls by cutting them in half 18.
Place the mayonnaise at the base of the bread 19, then the tuna 20, and the olive and caper tapenade 21.
Add the onions and lamb's lettuce 22, close the sandwich 23, and serve it 24!
