PRESENTATION

Air fryer tart is really taking over Italian kitchens these days. It’s blending traditional desserts with modern gadgets, and it still keeps that classic charm we all love. Using a pasta frolla base, this tart comes with the kind of tender, crumbly shortcrust pastry you'd find in family bakeries. Typically, Italians go for apricot jam as the filling. Really popular. But hey, you’ll also find homemade sweet strawberry jam, rich pastry cream, or even a spread of Nutella—yep, Nutella—at many homes.

Whatever filling you choose, expect a bold flavor and a golden finish. It’s really hard to resist sneaking a piece before it cools down, I gotta say. The air fryer offers that same crispy, moist pastry but in less time than an oven. You know what? It totally preserves the Italian taste people adore. How to prepare Air Fryer Tart

To prepare the tart in the air fryer, first make the shortcrust pastry: you will need butter that is soft but still pliable, so leave it at room temperature long enough to reach the right consistency. Start by cutting the butter into cubes and put them in a bowl. Add the powdered sugar 2 and work the mixture with your hands or a whisk until you obtain a cream 2. Then add the lightly beaten egg 3.

Mix well with a spatula; don't worry if the mixture doesn't look completely homogeneous 4. At this point pour in all the flour at once 5 and knead with your hands, preferably cool ones 6.

As soon as the flour has been absorbed, transfer the mixture to a work surface 7 and work very quickly until you get a smooth ball 8. Wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes. After 30 minutes, roll out the pastry using a little flour for dusting 9; flour the rolling pin well too. You should obtain a thickness of about 3/8 in.

Fit the pastry into the pan and trim the excess by pressing with the rolling pin 10 or cutting with a small knife. Reknead the scraps and set them aside; they will be used to make the lattice strips. Now prick the base with the tines of a fork 11. Fill with the jam and level it 12.

Roll out the saved scraps of pastry again; you can do this between two sheets of parchment paper to avoid adding too much flour. If the dough becomes too warm, briefly transfer it to the freezer. Cut strips of dough with a fluted pastry wheel 14 and place them over the tart in one direction 15.

Place the strips also in the opposite direction to create the classic lattice 16. Bake in the air fryer 17 at 320 F for 20 minutes. We used a 6.5 L (about 6.9 qt) air fryer. After 20 minutes, remove the tart from the fryer and let it cool 18.

Remove the tart from the pan, transfer it to a plate 19 and decorate with powdered sugar 21. Your air fryer tart is ready to be enjoyed 21!

Storage

The air fryer tart can be stored for 3-4 days under a glass dome at room temperature.

It can be frozen.

Tip

You can flavor the pastry with lemon or orange zest, or with vanilla seeds.

Besides jam, you can use Nutella, pistachio cream or pastry cream to fill the tart.
