Homemade Beef Burger Patties: Classic, Herbed & Cheese-Stuffed

/5

PRESENTATION

Homemade things are much tastier, more genuine, and also more economical. If you want to make yourself a fantastic sandwich, follow our recipe for homemade meat hamburgers and you'll taste the difference!

A good burger starts before the grill. The patty is where most homemade versions go wrong — wrong fat ratio, overworked meat, seasoning that disappears in the cook. This recipe uses high-quality ground beef and gives you three versions to work with: classic, with aromatic herbs, and with cheese folded into the mix. Same base, three different results depending on what you're building toward.

From there, the combinations are yours. Cheddar, lettuce, and pickles for the American classic. Toma cheese, roasted potatoes, and salsa verde for a Piedmontese version that makes a convincing case for Italian burger culture. Or skip the bun entirely and serve the patties as a main with whatever's in season alongside. The technique is the same either way — and once you've made your own, the frozen aisle stops making sense.

Preparation

How to prepare Homemade Beef Burger Patties: Classic, Herbed & Cheese-Stuffed

To prepare homemade meat hamburgers, first divide the ground beef into 3 bowls: 2 with 12.7 oz and one with 11.7 oz. Take a bowl with 12.7 oz and add salt 1 and pepper to taste (2), then mix with your hands (3).

Place a 4.3-inch diameter pastry ring on a square of parchment paper, take a portion of 6.3 oz meat and press it inside the ring 4. Use a meat tenderizer to obtain a uniform thickness 5, then remove the ring 6. Do the same with the remaining portion of the mixture to make 2 hamburgers.

Now chop the aromatic herbs with a knife 7 and add them to the second bowl with 12.7 oz of meat 8. Salt, pepper, and mix with your hands to obtain a uniform mixture 9.

Form 2 hamburgers using the pastry ring and meat tenderizer 10 11. Finally, grate the edamer with a coarse grater 12.

Add the cheese to the bowl with 11.7 oz of meat 13, salt, pepper, and mix with your hands, then form the last 2 hamburgers in the same way 14. Your homemade meat hamburgers are ready to be cooked 15!

Storage

Homemade meat hamburgers can be stored in the fridge, covered with plastic wrap, for a maximum of one day.

They can be frozen if you used fresh meat.

Advice

Cook the hamburgers for 4-5 minutes per side on a grill pan or skillet brushed with oil; if using a skillet, you can add a splash of water after flipping them and finish cooking with the lid on to keep the meat tender and juicy. The important thing is not to press or pierce them to avoid losing their juices. Alternatively, you can cook them in an air fryer!

Cheese burgers, being flavorful on their own, can be served on a plate with roasted potatoes. The classic burger pairs perfectly between two slices of soft bread enriched with mayonnaise, tomatoes, lettuce, and onion. Lastly, the herb version deliciously combines with melted cheddar, ketchup, and crispy bacon!
